Turnips are best when they are somewhat small in size. They tend to be sweeter than the larger bulbs, which can develop tough skins and a much stronger flavor. They are delicious roasted, which brings out their distinctive sweetness. They can also be added to soups and stews, puréed or mashed, or simply baked.
