From a botanical perspective the tomato is actually a fruit, even though they belong to the same family as potatoes, peppers and eggplants. Choose tomatoes that are heavy for their size and avoid any that have soft spots or are leaking juice. Fresh tomatoes have been shown to help lower total cholesterol, LDL cholesterol, and triglycerides. The flavor of a tomato blends a subtle sweetness with that of a slightly bitter and acidic taste. Tomatoes dislike a chill. Keep tomatoes at room temperature for the best flavor and to avoid the mealy texture that can result from putting them in the refrigerator.
