This tomato variety is known for its use in tomato paste and sauces, Roma tomatoes have a large thick-walled skin, are quite meaty, with very few seeds. This tomato is not juicy nor is it a slicing tomato. Instead, the flesh is thick and drier so that it will cook down into a thick sauce. Cooking actually intensifies its flavor. If you can tomatoes, or make your own spaghetti sauce, this tomato is a great choice. It's not too juicy in the pan as with slicing tomatoes and Roma tomatoes freeze well for later cooking.
