Like oranges, kumquats are delicious in savory dishes. Since cooking them mellows their acidity, they make great chutneys and relishes. Kumquats eat differently than other citrus varieties. In most citrus, the juicy pulp is consumed and the peel discarded. Kumquats, however, are eaten whole, and their appeal stems from the contrast between their tart flesh and the thick, sweet rind.
