Jerusalem Artichokes

Jerusalem artichokes, also known as sunchokes, are little tubers that look a lot like ginger root. They have a potato-like texture and can be used as a potato substitute. Their texture is very crispy and they have a slightly sweet nutty flavor to them. Nutritionally, they are a superb source of potassium.
