Green Bell Peppers

Bell peppers are a delicious vegetable that can be enjoyed either raw or cooked. They are actually harvested before they are fully ripe. A green bell pepper (when left on the vine) will continue to either turn yellow or red depending on the plant. Their flavor is slightly more bitter than the much sweeter red and yellow varieties. Bell peppers contain very high amounts of vitamin C and Vitamin A as well as significant amounts of vitamin B6 and dietary fiber.
