Green Beans

Green beans (also called snap beans and string beans) should snap easily when broken. Select beans that are a deep green color with a very smooth surface. Green beans will hold their color best when cooked at a high temperature for only a brief bit of time. To keep that nice deep green color intact and hold on to the crisp texture place them immediately into cold water after cooking.
