Enoki Mushrooms

The enoki mushroom is commonly found in Asian dishes, particularly Japanese dishes like nabemono and sukiyaki. They have a very crisp texture, unlike what we typically think of with mushrooms. Enoki’s should be firm and white; not discolored or slimy. Enoki mushrooms are traditionally used in soups and stir-fries, but can also be used in salads. Their flavor is mild and somewhat fruity.
