Endive is a member of the chicory family, which includes radicchio, escarole, frisee and curly endive. It has a crisp texture and a sweet, nutty flavor with a pleasantly mild bitterness — great served raw or cooked. Endive is a very low calorie green-vegetable. Vitamins in endive are plentiful. Fresh leaves are an excellent source of several Vitamin A and beta carotenes as well as a rich source of vitamin K, vitamin C, and folates, while also containing lots of minerals like iron, calcium, magnesium, and potassium, which are very essential for body metabolism.
