Chantarelle Mushrooms

Chanterelle mushrooms should have a fragrant odor (often described as apricot or peach-like) and their color should be golden or apricot. Chanterelles are meaty and chewy. One of the best ways to cook them is to slice and sauté them. Rarely are chanterelles eaten raw as their finest flavor only comes forward when cooked. In the world of fine cuisine, chanterelles are considered gold.
