Anaheim Peppers

Anaheim peppers are a mild variety of chili pepper used in Mexican and Southwestern cooking. These peppers have a sweet, bell pepper–like flavor with a bit of mild heat. They are often stuffed with vegetables, cheese, and spices to make chiles rellenos. When used in salsas they produce a milder flavor than jalapeño or serrano peppers. The membranes and seeds of Anaheim peppers are much hotter than the walls of the pepper. So, if you want a milder flavor, be sure to take the veins and seeds out before using the pepper.
